if you were using LVM instead of partitions, you could do a snapshot, and then 
use the partition-on-block-device tools to mount it (ntfs? ro?) and then use 
rsync to backup only modified files.

but since you can't do a snapshot, i'd use rsync over ssh ('-c blowfish-cbc' 
makes ssh easier on the CPU!) to copy from a running DomU
