Still haven't been able to get the MAC address to change, but I was able
to change eth2 to eth0 following this document as guide:
http://tomclegg.net/xen-eth0-renamed

Wasn't word for word, but somehow my eth2 is now eth0, and now Remedy
finished the installation. Still can't be sure I'm out of the woods yet
though, still getting an error about hostid, which I think is them
trying to determine their hostid for licensing, based on the MAC. 

Plus, I still want to figure out how to change the MAC. If I ever
move/migrate the domU to a new host, I'll need to be able to make the
MAC stay the same.
