Well, rpm does that - first you might erase kernel-xen then install
it, changing grub.conf to the 2.6.16.33-xen_3.0.4.1 initrd and vmlinuz
it installs....
Does /etc/modprobe.conf show the drive adapter?
Failing that, compare the Xen and Centos boot logs, esp. the PCI parts...
