XEN on CentOS 5.6 also just works, which is why why use that combination.

But, Red Hat 6 has dropped native XEN support for KVM - which I don't
want to use.
And since CentOS 5.6 / RH 5.6 only supports XEN 3.0 natively, I'm
thinking of maybe switching to something else.

But I don't have much experience with Debian / OpenSuse / anything else?
