If by "3.0.3" you mean RPM packages from RHEL/Centos, the real version
is actually 3.1.2 + lots of backports. Don't let the RPM number fool
you :)

I've been using both RH's Xen and 3.3.1, and they're both stable. Note
Luke's suggestion, and you might also want to look at this:

I've also started using Xen 3.4 (same settings) on another server, no
problems so far. If you use RHEL/Centos it's easier to use packages
from http://www.gitco.de/repo/. For most purposes they would work fine
with RHEL's -xen kernel. The exception is if you use some new features
that needs dom0 kernel support (like scsi passthru), but (from your
usage description) you won't need it.
