I've migrated some physical Windows servers to a HVM stubdomain with PING, look:

  I do this using Backup Exec for Windows 2003 servers (for doing restore tests of customer backups). The machines that are backed up are physical Windows machines (eg no virtualisation involved) but are restored into Xen HVM domains. 
 
Part of the restore involves re-applying a few hotfixes, and the system won't boot without this, so I assume that Backup Exec has some voodoo for making the system bootable on the new platform even though it's different than the old one.
