Lack of experience, I must admin, when I got started I was using FC8. :) 
We also run Xen 3.3, in case anyone cares, our setup is:

Dual Quad core Xeon e5410 2.33 GHz CPUs
32 GIG DDR2 FB 800 MHz RAM
3Ware 9640SE-ML16
16 500 GIG disks in one RAID 6 volume
8 Gig Flash boot/root
Mellanox MT25204 Infiniband

Centos 5.2
Xen 3.3
GPT / DRBD 8.2.7 / CLVM2 / LVM / DomUs
