I missed your reply on this, so sorry it took some time to get back to you.

Are you actually running a 64 bit version? Debian Sarge was not
officially released for x86_64, and if you followed the guide you
referred to, you might have some i386 packages in there. Also, the
output from uname looks like it is a x86 kernel (2.6.16-1-xen-686)

I have a couple of 2950s running a custom x86 kernel with pae and that
works fine.
