Yes, I run HVM SMP guests all the time too.

Removing the "quiet" option and setting vcpu=4, I see this:

   Very odd, I run 4-way HVM guests all the time.  The domain boots if
vcpus=1 is set in the config file?  You might try removing the quiet
option from the guest elilo to see if you get any informative boot
messages.
