The latest version of Pygrub has grub2 support.

I've tested it and it works with lucid as a domU.

The only mild annoyance with Ubuntu is their use of Grub 2.  However, if
you install as HVM first and then install grub v1, it works just fine.
There are plenty of examples on the web of how to do that.

If you don't want to do that or can't for hardware reasons then take a
look at one of the domU image download sites such as
http://www.stacklet.com/

Don't despair. Stay with Xen -it is still the best hypervisor and all
round virtualisation solution out there!
