Well, in terms of number of interfaces per domU, you certainly haven't exceeded that.  I've got plenty of domUs that use two network interfaces and a couple that use three - no issues there.  I've never tried ethernet aliases before in a domU, so I couldn't tell you if that works or not.  Which interface is failing when you boot the domU?  If the alias is the only one failing I'd say there's an issue with IP aliasing, but more information is needed.  Also, is this a PV domU or an HVM?
