The xend config file should be called xend-config.sxp or something like
that. I installed via Debian and it ended up in the /etc/xen directory
which is probably where it is on your system also. This is quite an
important config file - it's essentially where you tell xend which mode
of networking to use (bridged or routed) amongst other things. 

I'm still digesting the rest of the information you gave me, so bear
with me.
