make-kpkg --arch="xen" --subarch="xenU"

vs. 

make-kpkg --arch="xen" --subarch="xen0"

This is kernel-package stuff, not related to kernel-patch-xen at all.

You can also run your normal xen0 kernel as a guest kernel - it just
tries to access all hardware, but fails.
