We have a few Windows 2008 HVMs so should we switch the the new disk config?  
We are using LVM and file based images by the way.

You will need hda for hvm on dom0 side for the bios emulation. In later kernels on domU side (2.6.38+) you will need hda on dom0 side (in xmconfig.cfg) and xvda on domU side (in fstab) or simply uuids to get along.

That doesnt affect your win2008 HVMs, of course, but as i said, you will need 
hda for bios emulation.
