Setting up networking manually is the easiest way to accomplish this:
http://wiki.xensource.com/xenwiki/HostConfiguration/Networking

(Xen 4.1 is not required)

You can simply add two bridge entries to your interfaces file. Also
disable the bridge scripts in the xend config.
