You almost there! Just install Xen, a Linux with dom0 support and configure your GRUB...

I am currently using rEFIt to boot OSX, Red Hat 5 or Fedora on my Macbook Pro.  Not doing anything with Xen, although I've installed the Xen kernels.  Not enough play time right now.
