Well, every Redhat (and clone) install uses LVM, and so, thus, would
Xen on top of it...

I guess next I'll remove the rpms and try a source install.

You can boot CentOS, so a source install is overkill seems to me. My
suggestion was to re-install from rpm's, but not run
depmod/mkinitrd...
