You need not configure MAC address for interfaces. Let xen choose a
random mac address. I am not sure whether you can assign mac address and
interface name statically for the second NIC.

In older versions of xen you need to specify a line in your dom-u config file saying "nics = 2" and you should be able to configure eth0 and eth1
in your dom-u as normal. Any way the nics option is deprecated in
xen-3.0.2 and you need to use an empty vif entry instead.

vif = [ '' ]

Though deprecated the "nics" option would work.
