What you can do is go into the directory, in xen, of your kernel source, 
e.g.linux-2.6.11-xen-sparce, and run the command mkbuildtree.  That will put 
the architecture files in your linux source.  Then go to your Linux source 
tree and run
make menuconfig ARCH=xen

I'm new to Xen as well, but I believe that is correct.  If I'm wrong someone 
please correct me.
