I suppose this is a completely arbitrary path that happens to work for you?
For your example command line
make -j1 XEN_TARGET_ARCH=ia64 CROSS_COMPILE=ia64-linux-gnu-
...this would link against the ugly and bizarre path
/usr/ia64linuxgnu/sys-root?
