We typically see error messages on only one guest's console, but other
guests and dom0 tend to lock up for ~30 seconds as well.
Do you have serial access to any of these systems. It'd be interesting
to get some debug output from Xen during one of these 'outages' and see
what it thinks the CPU is doing (e.g., the 'q' and 'd' debug keys would
be interesting).
