cd linux-2.6.11-xenU
ARCH=xen make
and then dig out the bzimage from inside the tree
or in the directory above do:
ARCH=xen make kernels
and it should only rebuild what has changed (plus a couple of files)
and dump the new bzimage into dist/install/boot for you
