Dave, this is probably a duplicate of bug#195. Please look over #195 and close
this unless you think this one is different.
Another thing to try is to use the hpet timer, you can add:
hpet_force=1
to the kernel line in grub.conf, for example:
title Xen 3.0-unstable (x86_32) / XenLinux 2.6-smp (on /dev/sda1)
root (hd0,0)
kernel /boot/xen.gz dom0_mem=524288 cdb=com1H com1=115200,8n1 sched=sedf
conswitch=x hpet_force=1
