Hmm, finding an issue that takes 200 hours to repro is not going to be fun.
What are you using to generate the workload?

Is the number of device interrupts (/proc/interrupts) still going up?

Is this an SMP dom0? Is irqballancing enabled? What happens if you hot-unplug 
other CPUs? 

The only time I've seen an issue like this is on aacraid devices, but its 
possible to repro that one on native. It required a firmware update for the 
to fix.
