Which version of xen does FC4 include, do you know? Is it 2.0.6?
Can you provide your ifconfig -a output before and after it's 
hosed? Also, it sounds like there may be a memory leak in your
system - does everything else work? Is the only symptom the
xen-br0 dysfunction? Could you attach your bridging scripts?
Are there any error messages in /var/log/messages, xend.log?
