Henrique,

You might want to take a look at Host sFlow:

http://host-sflow.sourceforge.net/

The agent is installed on Dom0 and will report on Dom0 performance as
well as statistics for each virtual machine.

Are you planning to use the Open vSwitch? The Open vSwitch is part of
the Xen Cloud Platform (XCP) and includes sFlow to provide detailed
visibility into inter-VM network traffic as well as exporting vNIC
interface counters.

SNMP polling doesn't work very well in dynamic environments where
virtual machines may be frequently created, destroyed or migrated. The
sFlow protocol uses a push model instead, making it extremely scalable
and very responsive to changing configurations.

Have you considered using Ganglia for monitoring your XEN servers?
Ganglia was designed to monitor clusters and grids and deals with
large server pools very well. The current development branch of
Ganglia (trunk) supports sFlow:
