What are you trying to do?
HVM guest behaves (mostly) like a normal physical machine, so you
wouldn't need a special kernel for HVM domU, or have
CONFIG_PARAVIRT_GUEST on. In fact, if your domU is Centos, it's best
just to use Centos' default kernel. Then again, if your domU is
Centos, it's better performance-wise to convert it to PV domU.
If for some reason you need to run it as HVM, and your domU distro
uses newer kernels (like Ubuntu) or you want to upgrade to newer
kernel version, you might want to use PV drivers to improve I/O
