The 64 bit Xeons copied AMD's 64 bit architecture and called it "EM64T" (or "Intel 64"). Debian uses "amd64" as a catch all to refer to both amd64 and em64t. So yes, the -amd64 is the correct kernel to use on 64 bit Xeons.
