At this point I'd advice you not use Xen 4.0.0 on Centos5. yet.

My first test is even worse than yours, the boot process stuck and
doesn't continue when using Xen 4.0.0 + RHEL/Centos's kernel-xen. I
finally compile my own kernel using gentoo-xen-kernel, which boots
correctly, but I still have some issues with blktap/blktap2. So at
this point I keep my production servers on Xen 3.4.2 or RHEL's version
of Xen.
