In your domU (guest VM), look for /sys/hypervisor/type and cat that file. If it's a fully-virtualized machine, you probably won't see these files and the O/S probably doesn't know about the hypervisor. If it's paravirtualized, these files should be there and you should see "xen" in the hypervisor type.
