Dunno about books, but for the "firewall in DomU" bit, that's quite easy.
Hide the PCI device of a network card from Dom0 - been discussed
recently, search the archives for pciback. Try a thread "Exclusive
allocation of network card" from around the 21st April this year.
Make the device available to the DomU.
Treat that as your outside interface, and the regular virtual network
card(s) as the inside.
Run whatever OS/Firewall combination you are happy with in the DomU -
treat it just like you would a real box with two (or more) interfaces.
