For the gain of anyone else reading.
I set my host HTTP server to host on 192.168.122.1 and then set the VM
to have an IP of 192.168.122.2
I could then access the HTTP-serverd loopback mounted ISO.

Ok it finally does go to an error screen where it can't find the web
server with the image on it.
I'm not sure what I should be using as far as guest IP settings are
concerned.
Can someone let me know what they should, in theory, be, if I need to
use the http image on the host server via the guest?

This seems to be picked up by the installer - it now goes directly to
TCP/IP settings.
After entering them manually, as there is no DHCP server, it goes to a
blue screen and does nothing further.
If my host is set to 10.0.0.1 I'm using 10.0.0.2. Should I be using some
bridge IP instead?
Any ideas?

If you're installing a paravirtual guest with virt-manager or
virt-install then try loop-back mounting the installation DVD where it
can be seen through a web browser and then use its url as the location
for installation. Check that the URL works from some other machine
before you do the installation :-)
If you're installing a hardware virtual guest, then install a
paravirtual guest instead: performance is generally quite a lot better.
