Often in this case, it is a matter of the guest console not showing up.
Try adding:
extra='xencons=tty'
To your guest config.
If that doesn't work, there are a few other things to try on the guest
kernel line that might work. You could search on xen.markmail.org
and/or mount the file system and check the /etc/init* and the getty
setup in the centOS guest.
