Xen does not require portmap and xfs and u can safely trun them off. It need haldaemon to hotplug devices.

So, do I really need these three components for Xen to work properly?

None of them are directly required by Xen. They may be required by other components in your system (particularly in the case of haldaemon, I would guess). Hal does all sorts of stuff involving hotplugging of devices, etc that I'm not very clear on. Portmap is, I think, something to do with NFS, xfs is the X font server - I'm not sure what it does but I doubt you need that on a typically dom0 either.

You could try switching them off and seeing if anything breaks ;-)
