xenman must be looking for a specific xen-utils version to be installed. The debian package might have been customized to work with the xen packages on debian.
I would recommend getting a source package from the xenman website and building it too (since you built the xen packages from source too) xenman seems to be called ConVirt now. They also have a users list that should be able to help you with ConVirt-specific errors.
