I believe it already does, at least on Fedora. Look at /var/log/xen/console. 
There should be logs for the hypervisor, and guests. Also look at the 
variables defined in /etc/sysconfig/xend, in particular, 
XENCONSOLED_LOG_HYPERVISOR & XENCONSOLED_LOG_GUESTS.
