Physical to Virtual (P2V) conversion is in fact possible. There is automatic support in the XenServer product from Citrix. You can do it manually, and this is pretty straight forward, you just need to make the system or partition available as a domU and make the necessary modification in terms of /etc/fstab, kernel, modules, etc. So easily is a relative term, so if you have decent Linux skills and get the basic Xen concepts you should be able to do it.

There has been a reasonable amount of discussion of XenServer vs. open source Xen on this list over the last week or two.
