I have the following in /etc/grub.conf:
serial --unit=1 --speed=115200
terminal --timeout=8 serial console

#XEN stanza
title XEN
 root (hd0,0)
 kernel /xen.gz-2.6.18-53.1.4.el5xen com1=115200,8n1
 module /vmlinuz-
2.6.18-51.1.4.el5xen ro root=/dev/VG0/ROOTFS quiet console=ttyS1,115200
 moudule /initrd-2.6.18-53.1.4.el5xen.img

I am still unable to access the console through the second serial port.

Should that com1 on the kernel line be com2?

you need on the xen.gz line com1=115200,8n1
and then on the first module line
console=ttyS1,115200
