Have you tried the RPMs on the XenSource website?  They're for PAE Xen on 
Centos 4.4.

Alternatively, if you ran CentOS 5 it has Xen 3.0.3 virtualisation baked in 
along with the virt-manager administration tool.

I run Xen on CentOS 4.4 which I installed from xen-unstable.  You do need to 
build an initrd in order to boot CentOS because of its use of udev and the 
root=LABEL=/ syntax it uses.  You should also disable TLS.  CentOS 5 will 
take care of this for you, if you don't mind using a slightly old version of 
Xen (I've heard there'll be an update to 3.0.5 or somesuch when the RHEL / 
CentOS 5.1 release emerges).

Hope that helps.  If you're keen on getting your existing system to work, 
we'll need more information on what the panic message is.
