Try adding "noreboot" to your Xen-line in menu.lst/grub.conf - that
won't actually fix anything, but it will allow you to see the last few
lines of the output on the console. Alternatively, if you have a serial
port on both the target system and a different machine, you could use
the Xen console=com1:115200,8n1 and log the serial output.

That is probably the cause, but without further information, it is
guesswork and nothing else.
