I've been using XEN without much problem iif I disable ACPI. If I
leave ACPI enabled (and I do wish to do that to be able to use my two
cores) I have problems.

I've seen that on some machines, it can happen on machines with broken
ACPI tables.
Search for mails with acpi. But I never found a solution to this.

Also, different Xen versions can fix it.

You seem to be using a (debian?) different xen linux kernel than the
official release, so it might be appropriate to file a bug against the
package - if there are people knowledgable enough to port the Xen
patches to a Kernel multiple versins higher than the xenspurce
developers release it, they might also have an idea about what to do
with this problem.
