Here's what I'm using:

kernel (hd0,1)/boot/xen/xen.gz dom0_mem=4G com2=19200,8n1 console=com2,vga

console=ttyS1,19200 xencons=ttyS1
savedefault
In particular, the 'console=com2,vga' for Xen was really important -
the default Xen console is com1,vga.

If you have a monitor connected and a digital camera, that's a pretty
effective paddle :-)
