you should be able to connect to the virtual tty by using
xm console <id>
to login and change the needed values (e.g. /etc/network/interfaces ...)
you should also add the connection information into the /etc/xen/[machine]
configuration at your dom0.
to get one point of managing, my setup only uses dhcp (which is also given
in the machine configurations of the domU's) and a dhcpd with fixed ip
bindings to the given mac adresses.
i've never encountered network problems in this environment.
btw. did you setup *anything* in your config? (your domU's are showing the
same MAC ?!?)
