It'll probably be the standard xen0 default config - 
see 
/export/scratch/xeno-xencheck.bk/linux-2.6.8.1-xen-sparse/arch/xen/configs/xen0_defconfig

For dom0, just put a module line into the grub config after the line for the 
xen0 kernel, like for normal Linux.

For other domains you set the initrd variable in the config file and it'll get 
loaded automatically by the domain builder.
