 These are the primary references:

Resource virtualization profile (basis for all the processor, memory, disk, ... profiles). This covers the various resource types and their associated recorded/active settingdata: http://www.dmtf.org/apps/org/workgroup/redundancy/download.php/18208/Resource_Virtualization_Profile-0_8_1.pdf

For resource pools and their capabilities: http://www.dmtf.org/apps/org/workgroup/redundancy/download.php/17755/Allocation_Capabilities_Profile_v0_7.1.pdf

The overall System Virtualization abstract profile (lifecycle, etc): http://www.dmtf.org/apps/org/workgroup/redundancy/download.php/17412/DMTF_Virtual_System_Lifecycle_Profile_0_7_1.pdf

And the latest draft MOFS should be in here: http://www.dmtf.org/apps/org/workgroup/redundancy/members/uml452/download.php
or else look under the "(virt/part) MOF" section in http://www.dmtf.org/apps/org/workgroup/redundancy/documents.php

Gareth,
You mentioned that the two important documents to read were the System Virtualization Profile and the Resource Capabilities Document.
Did you mean the Resource Virtualization Profile? We cannot seem to track down the Resource Capabilities Doc.
thanks
Raj
